  • 1 kilogram mushrooms, sliced
  • 1⁄2 cup water
  • 1⁄4 cup balsamic vinegar
  • 1⁄4 cup cashews
  • 1 teaspoon Dijon mustard
  • 2 clove of garlic
  • 1 red onion
  • 1⁄2 cup red capsicum
  • 1 teaspoon dried thyme
  • 100 gram fresh baby spinach
  • Heat a large pan and sauté mushrooms for 2-3 minutes until slightly softened.
  • Add red onion and capsicum to mushrooms and sauté to slightly softened
  • Combine water, vinegar, cashews, mustard and garlic in food processor or high powered blender.
  • Mix sauce mixture with mushroom mixture, cover and let set for 20 minutes.
  • Serve on top of mixture of chopped baby spinach and rocket
